I'd try extracting the stream network by choosing a threshold for the flow accumulation grid. This would result in a layer that seperates "stream" from "not stream." Then, I'd calculate slope for each pixel over the water shed and use the "stream" pixels from the flow accumulation grid to extract slopes for the stream. You may need to do some smoothing, either before or after you extract the slope for the strem network.
